lovely ideas so far thanks all! especially like the idea of stewed apple on porrage etc.. for me and my children yum! and i can freeze some portions!

For the apples, I think they are nice stewed. Peel and slice them into thick slices, put them in a saucepan with a bit of water and just enough sugar, and stew. This makes a nice healthy breakfast with yogurt.
For the carrots you could make carrot and lentil soup.

Baked apples
Heat oven to 350
Take 5-6 baking apples like Rome or Granny Smith and core them. _Do not peel completely_. If you want peel just a little off the top near the core hole.
Mix up 1 cup brown sugar + 1/2 tsp cinnamon + pinch salt + optional 1/2 cup raisins
Place apples in a baking dish. Pour water till is reaches 1/2 inch on the baking dish.
Distribute the brown sugar mix between apples and stuff into their cores. Top each core with 1/2 tbsp butter.
Bake for 30 mins (or till apples are tender) basting with juice half way through and before serving.
Top with whipped cream or if you feel really indulgent vanilla ice cream
Carrots
This may sound weird but Indians make a fudge like dessert out of carrots. It is called Gajar (carrot) ka Halwa.
1 lb Sugar
2 tbsp Almonds
1/2 tsp Cardamom powder (or 5-6 cardamom pods
2 1/4 lbsCarrots
3 tbsp butter/ ghee
4 cups Milk
2 tbsp Pistachios/ cashew nuts
2 tbsp Raisins
# Wash and grate the carrots. Soak the raisins in water for 30 minutes. Blanch and shred the nuts.
# Put a heavy botton pot on medium heat. Melt the butter/ ghee then add the carrots and saute till the carrots are soft. Add the milk and bring to a simmer. Cook on a low flame for 1 hour stirring occasionally. Add sugar, mix well and cook till the sugar has dissolved and all the milk has been absorbed.
# Add the slightly crushed cardamoms and the raisins. Mix well.
# Remove the gajjar halwa from heat and arrange in a serving dish. Garnish with almonds and pistachios. Serve warm or at room temperature. If you have leftovers store in the fridge I like to microwave mine but some people eat it cold.

Apple sauce. then frozen in medium size freezer bags. About 2 cups in each bag. Freeze nice and flat . use it for baking, a dish with a little cream on top or with pork. I have seen a recipe for canning apples for pie filling but cannot find it rite now.
